2020 Pinot Noir (available early 2022)

Expression:
On the nose - red cherry and dark plum.  Dusky rose and mulberry fruit supported by savoury smoky tones. 
Pellet - rock (mineral) core with bright acidity, with a savoury texture.  Salivating.

Summerhill Heights Pinot Noir was hand picked and sorted.  The clusters were de-stemmed into open vats where they were fermented naturally.
Light extractions with foot plunge.
Macerated 1 month post infused fermentation, then pressed off and settled.
Wine was then racked into old oak barrels
After further racking, it was bottled un-fined and unfiltered.
